Su Legno, Barrel Fermented Ales. - Crafting Exceptional Ales Since 2022 (officially!)
Welcome to Su Legno ‘On Wood in Italian.’ Where science, practical brewing and craftsmanship converge to create exceptional barrel-fermented ales. Since 2022, we have been dedicated to brewing unique, interesting and delicious barrel fermented ales. We combine modern brewing science with techniques from the past. All of our beers are fermented in charred American oak barrels, without refrigeration, for a short duration of time before undergoing a secondary fermentation in bottle.
Our Story:
At Su Legno, we believe that brewing is art and science combined. It all started with an inspiration to craft ales that go beyond contemporary beer styles and utilise materials and methods from the 18th and 19th century, before the advent of stainless steel and refrigeration. We combine modern brewing science and ingredients with processes and equipment inspired by the past. Pushing the boundaries of flavour and elevating the beer-drinking experience. Inspired by traditional brewing techniques and driven by innovation, we embarked on a journey to create something truly different and delicious. What’s old is new again.
Return of the Artisan:
Every beer that leaves our brewery is a testament to our commitment to quality. We take pride in our meticulous brewing process, paying attention to every detail from the selection of premium ingredients to the careful monitoring of fermentation. Our barrel-fermented ales are lovingly hand crafted and nurtured, allowing the flavours to develop and mature naturally into something that can be enjoyed by itself or paired with food.
Barrels as Our Signature:
One aspect that sets us apart is our devotion to barrel fermentation. We believe that the marriage of beer, charred wood, horizontal fermentation and no refrigeration adds depth, complexity, and character to our beer. The combination of these factors imparts its unique influence, creating complexity in the final product. Our Brewer:
With years of experience in the culinary world, John embarked on a journey of discovery, pursuing an applied biology degree at university. After convincing his brother Daniel to buy them a Grainfather when he got back from his military service, they began their never ending journey. It was during this time that a love for home brewing and science took root, igniting a passion for beer. This pivotal moment set the stage for a professional brewing career that would soon follow. Upon completing university, John joined the ranks of South Australia's largest brewer, where he immersed himself in the world of brewing. Continual education and a passion for knowledge led him to pursue and successfully obtain a diploma in brewing, further solidifying his expertise in the field. John applies his knowledge of science and culinary training to create our beer.
