A Premium South Australian Cherry Saison Ale
An amber/red, moorish and complex Cherry ale showcasing 2025/26 season's Adelaide Hills cherries.
Su Legno Cherry Saison is crafted using pilsner malt, chocolate malt and crystal malts to produce a unique seasonal cherry ale. It is fermented warm, without temperature control, in charred American Oak barrels, then re-fermented on whole organic dark flesh Adelaide hills cherries for one month before bottle conditioning.
Brewed in late Summer using traditional methods and seasonal fruit.
Single barrel primary fermentation in charred American Oak one week. One month re-fermentation on whole organic dark flesh cherries in stainless steel. Minimum 6 weeks bottle conditioning.

Tasting notes and serving temp:
Medium body, bittersweet, amaretto, cherry skin, balanced and nuanced cherry flavour and aroma, hints of chocolate as it warms. Ideal for the last month of Autumn as the weather cools.
